I made this recipe back in late November, and naturally am just now finding time to upload it. Bad blogger! But hopefully the pictures and the recipe itself will encourage you to try it. =)
- 1 large onion, diced
- 1 tbsp canola oil
- Salt to taste
- Optional seasonings: black pepper, oregano, cumin, coriander, chopped garlic, hot smoked paprika, chili powder -- basically anything (I used pepper, oregano, cumin, garlic, chili powder, and paprika, I do believe!)
- One 28oz can whole tomatoes, pureed in the can with a hand blender or in a normal blender (Since I don't own a hand blender and didn't want to break out the big guy blender, I just ended up using a can of crushed tomatoes; a jar of pasta sauce would work great too, and potentially add more flavor!)
- 2 lbs ground beef
- 1 box macaroni
- 1 c each grated cheddar and mozzarella cheeses
Employ your significant other to smash up some cumin seeds while you tend to chopping the onion.
Brown your hamburger meat and drain the fat; add onions to the party. I threw a little (who am I kidding? a lot) of minced garlic in for good measure.
Cook the macaroni according to the package directions, and then add to the meat and onions along with the tomatoes and any other dry seasonings you prefer.
When the mixture has cooled, pour it into a baking dish. It can sit out for several hours like this, be refrigerated for up to two days, or frozen for a few weeks.
Like the original author of this recipe, I also wanted to stretch this into two meals, so I put half in one dish to cook that night and half in another to throw in the freezer. The frozen meal came in handy when I wanted a quick dinner one night a couple of weeks ago!
When you're ready to cook your meal, top with some delicious cheese...
And bake at 400 degrees for about 45 minutes, or until piping hot and bubbly.
Top with additional cheese if you're feeling adventurous, and then serve and enjoy!
